  • 11 oz Shortbread cookies crushed
  • ¾ cup Powdered sugar
  • 8 oz Cream cheese room temperature
  • ½ cup Bailey’s Irish Cream original flavor
  • 2 cups White candy melts or white chocolate chips or almond bark
  • 4 oz Chocolate chips semi-sweet or dark for drizzle

  • Crush the shortbread cookies down to fine crumbs using a food processor or rolling pin.
  • Add powdered sugar, cream cheese, and Bailey’s Irish Cream to the crumbs and mix until smooth and creamy.
  • Scoop small portions and roll into balls. Place on parchment-lined baking sheets.
  • Refrigerate the tray for 30 minutes until firm.
  • Melt white candy melts or white chocolate chips according to package instructions.
  • Dip each cheesecake ball into the melted chocolate, let excess drip, and place back on tray.
  • Melt the chocolate chips and drizzle over the cheesecake balls.
  • Chill until coating is set, then serve.

Notes

Make sure cream cheese is softened to avoid lumps. Reheat candy melts in 15-sec bursts if needed. Stir in vegetable oil if too thick. Best served chilled, lasts 5 days in fridge.
