  • 1 lb chicken cut into small bite-size pieces
  • 125 g flat rice stick noodles not vermicelli
  • 1 teaspoon minced fresh ginger
  • 2 cup chicken broth
  • ½ cup peanut butter
  • 3 cloves garlic minced
  • 2 tablespoon sambal oelek chili paste
  • 1 tablespoon fish sauce
  • 1 tablespoon sesame oil
  • 2 tablespoon soy sauce
  • ½ cup scallions chopped
  • 1 cup matchstick carrots or julienned
  • 2 red peppers diced
  • ½ cup chopped cilantro
  • ½ cup peanuts for garnish

  • Turn your Instant Pot to Sauté mode. Add sesame oil and toss in chicken pieces. Cook just until lightly browned, around 3-4 minutes.
  • Add minced garlic and ginger. Stir for about a minute until fragrant.
  • Pour in chicken broth, soy sauce, fish sauce, sambal oelek, and peanut butter. Stir well until peanut butter begins to dissolve.
  • Break rice stick noodles in half and push them down gently to mostly submerge in liquid.
  • Cancel Sauté mode, seal lid, and set Instant Pot to Manual High Pressure for 4 minutes.
  • When done, quick release the pressure carefully. Open lid slowly.
  • Stir everything well to coat noodles. Let sit 2-3 minutes to thicken sauce before serving.
  • Stir in carrots, red peppers, and scallions. Top with peanuts and cilantro before serving.

Notes

This recipe works best with flat rice stick noodles and quick pressure release. Substitute chili paste if needed, and thin sauce with water after pressure if desired.
