  • 2 tablespoons Mayonnaise homemade or store-bought
  • 0.5 tablespoon Irish whiskey or lemon juice
  • 1 small clove Garlic pressed or minced
  • Sea salt and black pepper to taste
  • teaspoon Paprika add more if desired
  • 1 tablespoon Olive oil for caramelizing onions
  • 1 small Sweet yellow onion thinly sliced
  • 1 pound Ground beef 85% lean grass-fed
  • 2 ounces Cheddar cheese grated or sliced
  • 2 slices Thick-cut bacon cooked and folded
  • 2 Hamburger buns

  • Mix mayonnaise, Irish whiskey, garlic, salt, pepper, and paprika in a small bowl. Chill until serving.
  • Heat olive oil in a skillet over medium. Add onion slices and cook, stirring, until caramelized (10-15 minutes).
  • Preheat grill or skillet to medium-high. Form ground beef into 4 patties and season both sides with salt and pepper.
  • Grill patties 3-4 minutes per side. Add cheese just before they finish and cover to melt.
  • Toast hamburger buns. Spread aioli, add burgers, caramelized onions, and bacon. Top with the bun.
  • Serve immediately while hot.

Notes

To keep non-alcoholic, substitute lemon juice for whiskey in the aioli. You can double this recipe easily for more servings.
