Instructions
Mix mayonnaise, Irish whiskey, garlic, salt, pepper, and paprika in a small bowl. Chill until serving.
Heat olive oil in a skillet over medium. Add onion slices and cook, stirring, until caramelized (10-15 minutes).
Preheat grill or skillet to medium-high. Form ground beef into 4 patties and season both sides with salt and pepper.
Grill patties 3-4 minutes per side. Add cheese just before they finish and cover to melt.
Toast hamburger buns. Spread aioli, add burgers, caramelized onions, and bacon. Top with the bun.
Serve immediately while hot.
Notes
To keep non-alcoholic, substitute lemon juice for whiskey in the aioli. You can double this recipe easily for more servings.
