Begin by boiling 1 cup of water. Once boiling, pour the hot water into a medium mixing bowl.
Add the two packages of Jello to the hot water. Stir continuously with a whisk until the Jello is fully dissolved (about 2-3 minutes).
Pour in 1 cup of cold water to the Jello mixture and stir until well combined. Allow the mixture to cool slightly for about 5 minutes.
Prepare your plastic Easter egg molds by lightly coating them with non-stick spray.
Carefully pour the Jello mixture into the molds, filling them to the top.
If desired, drop a spoonful of whipped cream or marshmallow fluff into the center of half of the molds for surprise filling, along with some pieces of fruit if using. Then seal them off with additional Jello mixture.
Once filled, carefully snap the molds shut and place them in the refrigerator. Allow them to chill for at least 4 hours, or until fully set.
After the Jello has set, gently remove the mold by twisting and pulling the halves apart.
Serve your Jello Easter Eggs on a platter, and enjoy!
