Ingredients
  

Chicken & Seasoning

  • 4 large chicken breast
  • 3 teaspoon onion powder
  • 3 teaspoon garlic powder
  • 2 teaspoon smoked paprika
  • 2 teaspoon coconut sugar or brown sugar
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 1 teaspoon allspice
  • ½ teaspoon cinnamon
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • 1 tablespoon olive oil or avocado oil

Pineapple Salsa

  • 1.5 cups pineapple diced
  • ½ cup tomatoes diced
  • 3 tablespoon red onion diced
  • 3 tablespoon fresh cilantro chopped
  • 1 lime juiced
  • 1 jalapeno pepper diced, seeds removed
  • pinch sea salt

  • Mix all dry spices and thoroughly rub over chicken breasts.
  • Turn on saute mode, heat oil, and sear chicken for 2 minutes on each side.
  • Seal pressure cooker, set timer for 12 minutes once it reaches pressure.
  • Quick release pressure once done and check chicken reaches 165°F internally.
  • Let chicken rest for 5 minutes before slicing.
  • While resting, mix pineapple, tomatoes, red onion, cilantro, lime juice, jalapeno, and sea salt to make salsa.
  • Top sliced chicken with the pineapple salsa.
  • Serve with rice, veggies, or your favorite side.
