Instructions
Mix all dry spices and thoroughly rub over chicken breasts.
Turn on saute mode, heat oil, and sear chicken for 2 minutes on each side.
Seal pressure cooker, set timer for 12 minutes once it reaches pressure.
Quick release pressure once done and check chicken reaches 165°F internally.
Let chicken rest for 5 minutes before slicing.
While resting, mix pineapple, tomatoes, red onion, cilantro, lime juice, jalapeno, and sea salt to make salsa.
Top sliced chicken with the pineapple salsa.
Serve with rice, veggies, or your favorite side.
