Ingredients
  

  • 1 lb ground beef
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste none Salt and pepper Adjust seasoning to suit taste preferences.
  • 4 pieces low-carb tortillas Any low-carb tortillas that fit dietary requirements.
  • 1 cup shredded cheese Cheddar or Mexican blend.
  • 1 cup enchilada sauce Sugar-free.
  • to taste none fresh cilantro for garnish Optional.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat, breaking it up with a spoon as it cooks.
  • Once the beef is browned, add the diced onion and cook for 3-4 minutes until softened.
  • Stir in the minced garlic, chili powder, cumin, paprika, salt, and pepper. Cook for an additional minute until fragrant.
  • Remove the skillet from heat and set it aside.
  • On a clean surface, lay out the low-carb tortillas. Spoon a portion of the beef mixture onto each tortilla and roll them tightly.
  • Place the rolled tortillas seam-side down in a baking dish.
  • Pour the enchilada sauce evenly over the rolled tortillas, making sure they are well coated.
  • Sprinkle the shredded cheese over the top.
  • Cover the baking dish with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes, then garnish with fresh cilantro if desired. Serve hot.
