Ingredients
  

  • 1 lb kielbasa sausage, sliced into ¼-inch rounds
  • 1 large onion, thinly sliced
  • 2 bell peppers assorted colors, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the sliced kielbasa to the skillet and cook for about 5-7 minutes, stirring occasionally, until browned.
  • Remove the kielbasa from the skillet and set aside. In the same skillet, add the onions and bell peppers.
  • Sauté the vegetables for about 5-7 minutes, until they are tender and slightly caramelized.
  • Add the minced garlic and smoked paprika. Stir for about 1 minute until the garlic is fragrant.
  • Return the kielbasa to the skillet. Season with salt and pepper, and mix everything together.
  • Cook for an additional 5 minutes until everything is heated through.
  • Garnish with fresh parsley before serving.
  • Consider adjusting the vegetables according to your preference, like adding zucchini or mushrooms, if desired.
  • For added heat, consider adding a pinch of red pepper flakes during cooking.
