- 1 pound ground beef
- 2 cups cooked white rice
- ¼ cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 1 tablespoon minced garlic
- 1 teaspoon minced ginger
- 1 teaspoon Sriracha optional for spice
- 2 pieces green onions sliced
- 1 piece carrot julienned
- 1 cup broccoli florets
- as needed Sesame seeds for garnish (optional)
Begin by cooking the rice according to package instructions or in a rice cooker.
In a large skillet, heat sesame oil over medium heat. Add minced garlic and ginger; sauté for about 30 seconds until fragrant.
Add ground beef to the skillet. Cook, breaking it apart with a spatula, until browned (about 5-7 minutes).
Once the beef is cooked, drain any excess fat.
In a mixing bowl, combine soy sauce, brown sugar, and Sriracha (if using). Pour this mixture over the cooked ground beef, stirring to coat evenly.
Add the broccoli florets and carrots to the skillet. Stir-fry for an additional 3-5 minutes until the vegetables are tender.
Remove the skillet from heat, and stir in sliced green onions.
Serve the beef and vegetable mixture over a bed of cooked rice. Garnish with sesame seeds if desired.
Feel free to customize the vegetables based on your preference or what you have available. Bell peppers, snap peas, or zucchini would also work well.
For a lower-calorie option, consider using ground turkey or chicken instead of beef.
This dish can be prepared in advance, stored in the refrigerator, and reheated for quick meals throughout the week.
