Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the diced onion, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are tender and the onion is translucent.
Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Pour in the turkey broth and bring to a boil.
Once boiling, add the shredded turkey, frozen peas, corn, thyme, oregano, salt, and pepper. Stir to combine.
Lower the heat and let the soup simmer for about 25 minutes, allowing the flavors to meld together.
If desired, stir in the lemon juice for added brightness.
Serve hot, garnished with fresh parsley if using.
