Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 pounds total.
  • to taste salt
  • to taste pepper
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic Minced.
  • 1 cup chicken broth
  • ¼ cup fresh lemon juice About 2 lemons.
  • 1 piece lemon zest Zest of 1 lemon.
  • 1 teaspoon dried thyme
  • to taste fresh parsley Chopped, for garnish.

Instructions
 

  • Season the chicken breasts on both sides with salt and pepper.
  • Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and sear for 5-7 minutes on each side until they are golden brown and cooked through.
  • Remove the chicken from the skillet and set aside on a plate. Reduce the heat to medium.
  • In the same skillet, add the unsalted butter and allow it to melt. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the chicken broth, lemon juice, lemon zest, and dried thyme. Stir well, scraping any browned bits from the bottom of the skillet. Bring the mixture to a simmer.
  • Return the chicken breasts to the skillet, spoon the sauce over them, and cook for an additional 5 minutes, allowing the flavors to meld.
  • Remove from heat and garnish with fresh parsley before serving.

Notes

For added flavor, consider marinating the chicken in lemon juice and herbs for a few hours before cooking.
This dish pairs well with steamed vegetables or a light salad on the side.
