Ingredients
  

  • 1.5 pounds boneless, skinless chicken breasts
  • ¼ cup olive oil
  • ¼ cup fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh oregano, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 lemon cut into wedges (for serving) For serving, adds extra burst of flavor.

Instructions
 

  • Cut the chicken breasts into 1-inch cubes and place them in a mixing bowl.
  • In a separate small bowl, whisk together olive oil, lemon juice, chopped parsley, thyme, oregano, minced garlic, salt, and black pepper until well combined.
  • Pour the marinade over the chicken cubes, ensuring they are evenly coated. Cover the bowl and let it marinate in the refrigerator for at least 15 minutes, or up to 2 hours for more flavor.
  • If using wooden skewers, soak them in water for 10-15 minutes to prevent burning on the grill.
  • Preheat your grill to medium-high heat.
  • Thread the marinated chicken pieces onto the skewers, ensuring there is some space between each piece for even cooking.
  • Place the skewers on the preheated grill and cook for about 10 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  • Remove skewers from grill and let them rest for a couple of minutes before serving.
  • Serve the skewers with lemon wedges on the side for an extra burst of flavor.

Notes

Feel free to customize the herbs or add vegetables like bell peppers or onions to the skewers for added color and flavor.
These skewers can also be cooked in the oven at 400°F (200°C) for about 15-20 minutes if grilling isn’t an option.
Serve with a side salad or over rice for a complete meal.
