Drain excess fat if necessary and stir in taco seasoning. Cook for an additional minute, then remove from heat.
In a mixing bowl, combine the cooked meat, refried beans, salsa, and half of the shredded cheese. Mix well until fully combined.
Heat the tortillas in a skillet or oven until they are warm and pliable.
Take one tortilla, add a generous amount of the cheesy filling in the center, and fold it over to create a pocket.
Repeat with the remaining tortillas and filling.
Heat a skillet over medium heat. Place each pocket taco seam-side down and cook for about 3-4 minutes on each side until golden and crispy.
Remove from heat and sprinkle the remaining shredded cheese over the tacos, allowing it to melt slightly.
Serve warm with sour cream, and garnish with fresh cilantro and optional toppings.
