  • cup plain breadcrumbs
  • 2 large eggs
  • 1 tablespoon Worcestershire sauce
  • ½ cup yellow onion diced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 6 cups instant mashed potatoes prepared using package directions
  • 2 cups medium cheddar cheese shredded
  • ½ pound bacon cooked and crumbled
  • 2 tablespoons fresh parsley or chives diced

  • Preheat your oven to 375°F.
  • In a large bowl, mix ground beef, breadcrumbs, eggs, Worcestershire sauce, diced onion, garlic powder, onion powder, dried parsley, salt, and black pepper. Avoid overmixing.
  • Press the mixture evenly into a greased 9x13 inch baking dish.
  • Bake for 25 to 30 minutes until cooked through.
  • Remove from oven and drain excess grease.
  • Spread prepared mashed potatoes over the cooked meatloaf layer evenly.
  • Top with shredded cheddar cheese and crumbled bacon.
  • Bake an additional 10 to 15 minutes until the cheese is melted and bubbly. Garnish with parsley or chives and serve.

Notes

You can use ground turkey or chicken for a lighter version. Freeze leftovers for an easy future meal. Fresh herbs add extra brightness before serving.
