Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper if desired.
In a large mixing bowl, combine the ground turkey or beef, shredded cheese, chopped onion, cilantro, egg, garlic powder, chili powder, cumin, salt, and black pepper. Mix until well combined.
Using your hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter. Place the meatballs on the prepared baking sheet.
Bake the meatballs in the preheated oven for 20 minutes or until they are cooked through and browned.
While the meatballs are baking, heat the low-carb enchilada sauce in a saucepan on medium heat until warmed through.
Once cooked, remove the meatballs from the oven and transfer them to the saucepan with the enchilada sauce. Gently stir to coat the meatballs.
Serve the enchilada meatballs hot, garnished with additional cilantro if desired.
