- 1 cup cream cheese (8 oz)
- 1 cup sour cream
- 1 cup shredded cheese (like Monterey Jack or Cheddar)
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin

- 8 pieces low-carb tortillas (e.g., cauliflower or almond flour tortillas)
- ½ cup diced green chiles (optional, for added flavor)

Preheat the oven to 350°F (175°C).
In a large skillet over medium heat, mix together the shredded chicken, cream cheese, sour cream, ½ cup shredded cheese, chicken broth, garlic powder, onion powder, cumin, and diced green chiles if using. Stir until well combined and heated through.
Take a low-carb tortilla and scoop about ⅓ cup of the chicken mixture into the center. Roll the tortilla tightly and place it seam-side down in a baking dish. Repeat with the remaining tortillas and filling.
Once all enchiladas are in the baking dish, pour any remaining sauce over the rolled tortillas.
Sprinkle the remaining ½ cup of shredded cheese on top.
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
Remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly and golden.
