Instructions
In a large bowl, whisk together olive oil, lime juice, Tajin seasoning, and garlic powder until smooth.
Add chicken breasts to the bowl, coat thoroughly, cover and refrigerate for 30 minutes.
Preheat grill to medium-high heat while chicken marinates.
Grill chicken for 6–7 minutes per side, or until internal temperature reaches 165°F.
While chicken grills, combine diced mango, pineapple, red onion, cilantro, and lime juice in a bowl to make fresh salsa.
Remove chicken from grill and let rest for 5 minutes to retain juices.
Serve grilled chicken topped with the fresh mango pineapple salsa and lime wedges if desired.
Notes
You can prep the salsa an hour early, and use chicken thighs if preferred. Marinate overnight for extra flavor.
