Ingredients
  

  • 8 oz penne pasta
  • 2 tablespoons olive oil
  • 2 medium chicken breasts About 1 lb total, sliced.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 cloves garlic Minced.
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup sun-dried tomatoes Chopped.
  • 1 cup fresh spinach
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh basil to taste for garnish Optional.

Instructions
 

  • Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium-high heat. Season the sliced chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes until fully cooked and golden brown. Remove the chicken and set it aside.
  • In the same skillet, add the minced garlic and cook for about 1 minute until fragrant.
  • Stir in the heavy cream and chicken broth, then add the chopped sun-dried tomatoes, spinach, and Italian seasoning. Allow the sauce to simmer for about 3-4 minutes until the spinach wilts.
  • Return the cooked chicken to the skillet and stir in the grated Parmesan cheese until well combined. Allow to cook for an additional 2 minutes.
  • Add the cooked penne pasta to the skillet and toss everything together until the pasta is well coated with the creamy sauce.
  • Serve immediately, garnished with fresh basil if desired.

Notes

For added spice, consider incorporating red pepper flakes.
Feel free to substitute the chicken with shrimp or grilled vegetables for a different flavor profile.
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stove or in the microwave.
