- 8 oz penne pasta
- 2 tablespoons olive oil
- 2 medium chicken breasts About 1 lb total, sliced.
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 cloves garlic Minced.
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup sun-dried tomatoes Chopped.
- 1 cup fresh spinach
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Fresh basil to taste for garnish Optional.
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium-high heat. Season the sliced chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes until fully cooked and golden brown. Remove the chicken and set it aside.
In the same skillet, add the minced garlic and cook for about 1 minute until fragrant.
Stir in the heavy cream and chicken broth, then add the chopped sun-dried tomatoes, spinach, and Italian seasoning. Allow the sauce to simmer for about 3-4 minutes until the spinach wilts.
Return the cooked chicken to the skillet and stir in the grated Parmesan cheese until well combined. Allow to cook for an additional 2 minutes.
Add the cooked penne pasta to the skillet and toss everything together until the pasta is well coated with the creamy sauce.
Serve immediately, garnished with fresh basil if desired.
