  • 3 lbs russet potatoes peeled and chopped
  • 1 cup whole milk warmed
  • 4 tablespoon butter melted
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese plus more for topping
  • ½ cup cooked bacon bits
  • 2 green onions chopped
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • 1 cup water for pressure cooking
  • ¼ cup cream cheese softened
  • ½ teaspoon paprika optional for garnish

  • Place peeled and chopped potatoes in the pressure cooker with 1 cup of water.
  • Seal and cook on high pressure for 10 minutes. Quick release when done.
  • Drain any excess water and return potatoes to the pot.
  • Add milk, butter, sour cream, cream cheese, garlic powder, onion powder, salt, and pepper.
  • Mash everything together until well combined and creamy.
  • Stir in shredded cheddar, cooked bacon bits, and green onions.
  • Transfer mixture to a greased casserole dish and top with more cheese and paprika if using.
  • Bake under the broiler for 5-7 minutes until cheese is bubbly and golden.

Notes
