Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the ground beef, bread crumbs, Parmesan cheese, egg, minced garlic, Italian herbs, salt, and pepper. Mix well until fully combined.
Form the mixture into 16 meatballs, about 1.5 inches in diameter, and place them on a baking tray.
Bake the meatballs in the preheated oven for 20 minutes or until cooked through and browned.
While the meatballs are baking, prepare the gravy. In a large skillet, heat the olive oil over medium heat. Add the flour and whisk for about 2 minutes until it turns golden brown.
Gradually whisk in the beef broth, soy sauce, and Worcestershire sauce. Cook until the gravy thickens, about 5-7 minutes. Season with salt and pepper to taste.
To make the cauliflower mash, chop the cauliflower into florets and steam until tender, about 10 minutes.
In a large bowl or food processor, combine the steamed cauliflower, butter, and milk. Mash or blend until smooth. Season with salt and pepper to taste.
Once the meatballs are done, remove them from the oven and add them to the gravy. Stir gently to coat.
Serve the meatballs and gravy over a generous helping of creamy cauliflower mash.
