  • 1.5 pounds lean ground beef
  • 1 diced yellow onion
  • 3 teaspoons minced garlic freshly
  • 1 egg
  • 0.25 cup BBQ sauce
  • 0.25 cup tomato sauce
  • 0.5 cup frozen peas
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup chopped parsley
  • 1.5 pounds red potatoes peeled and quartered
  • 0.25 cup heavy whipping cream
  • 4 tablespoons butter
  • 1 cup shredded cheddar cheese

  • Preheat your oven to 375 degrees Fahrenheit, even though you start in the pressure cooker the oven finishes the top crust.
  • In a big mixing bowl, toss together your ground beef, breadcrumbs, diced onion, garlic, egg, BBQ sauce, tomato sauce, salt, and pepper. Mix gently but thoroughly.
  • Grease a loaf pan and shape the meat mixture into a compact loaf.
  • Spread a thin layer of BBQ or tomato sauce on top for a glossy finish.
  • Bake for 25–30 minutes until the meatloaf reaches 160°F internally.
  • Sprinkle frozen peas over the top and bake 5 more minutes.
  • Boil potatoes in pressure cooker until tender, then mash with cream, butter, and cheese. Serve hot with meatloaf.

Notes

Cool leftovers before storing. Use separate containers for meat and potatoes. Reheat gently with butter or cream to revive texture.
