Ingredients
  

  • 4 fillets salmon About 6 oz each.
  • 2 cups cherry tomatoes Halved.
  • 1 cup Kalamata olives Pitted and halved.
  • 1 medium red onion Thinly sliced.
  • 4 cloves garlic Minced.
  • 1 lemon lemon juice
  • ¼ cup extra virgin olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh parsley Chopped, for garnish.

Instructions
 

  • Preheat the oven to 400°F (200°C). Line the baking sheet with parchment paper for easy cleanup (optional).
  • In a mixing bowl, combine the cherry tomatoes, Kalamata olives, red onion, minced garlic, lemon juice, olive oil, oregano, salt, and black pepper. Toss until the vegetables are well-coated.
  • Place the salmon fillets on the prepared baking sheet. Spoon the vegetable mixture evenly over each fillet, pressing down slightly to adhere.
  • Bake in the preheated oven for 15-20 minutes or until the salmon flakes easily with a fork and the vegetables are softened.
  • Once cooked, remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
