Ingredients
  

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed 15 oz
  • 1 can corn, drained 15 oz
  • 1 packet taco seasoning 1 oz
  • 1 can diced tomatoes with green chilies 10 oz
  • 2 cups shredded cheddar cheese
  • 1 bag frozen tater tots 32 oz
  • 1 cup sour cream
  • 1 cup diced green onions for garnish
  • 1 jalapeño sliced optional, for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  • Add the black beans, corn, taco seasoning, and diced tomatoes to the cooked beef and stir well. Cook for an additional 5 minutes, allowing the flavors to combine.
  • In the baking dish, spread the seasoned beef mixture evenly across the bottom.
  • Layer the shredded cheddar cheese over the beef mixture.
  • Arrange the frozen tater tots in a single layer over the cheese.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  • After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the tater tots are golden and crispy.
  • Remove from the oven and let cool for a few minutes. Serve with sour cream, diced green onions, and jalapeño slices for garnish.

Notes

Feel free to customize this casserole by adding other beans or veggies of your choice.
If you want a spicier flavor, add some chopped green chiles or increase the amount of taco seasoning.
This dish can be prepared in advance and stored in the refrigerator, simply reheat before serving.
