In a food processor, pulse chocolate graham crackers, ½ cup sugar, and coffee grounds into fine crumbs. Add melted butter and pulse to combine until texture resembles wet sand.
Press crumb mixture firmly into a greased 9-inch springform pan to form the crust.
In a large bowl, beat softened cream cheese until smooth. Add eggs one at a time, mixing well after each. Mix in remaining ¼ cup sugar, sweetened condensed milk, heavy cream, and vanilla extract until fully incorporated.
Fold in flour, salt, chopped Milky Way Midnight Bars, and dark chocolate chips.
Pour filling over prepared crust and smooth with a spatula.
