Ingredients
  

  • 1 pound small potatoes Such as baby Yukon Gold or red potatoes.
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 1 pinch fresh parsley For garnish (optional).

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • Wash the small potatoes thoroughly and slice them into ¼-inch thick rounds.
  • In a mixing bowl, combine the olive oil, garlic powder, dried oregano, salt, and black pepper. Mix well.
  • Add the potato rounds to the bowl and toss them with the oil and seasoning mixture until they are evenly coated.
  • Arrange the coated potato rounds in a single layer on the prepared baking sheet.
  • Sprinkle the grated Parmesan cheese evenly over the potato rounds.
  • Bake in the preheated oven for 20-25 minutes or until the potatoes are tender and the cheese is golden and crispy.
  • Once baked, remove from the oven and let them cool for a few minutes. Garnish with fresh parsley if desired and serve hot.
  • For extra flavor, you can experiment with different herbs like thyme or rosemary.
