Prepare the baking pan by lining it with parchment paper or lightly greasing it with non-stick spray.
In a large mixing bowl, combine the crispy rice cereal, peanut butter, and honey (or maple syrup). Stir until the cereal is evenly coated and the mixture is well combined.
Transfer the mixture into the prepared baking pan. Press it down firmly and evenly to create a compact layer.
In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
Pour the melted chocolate over the pressed cereal mixture in the baking pan. Use a spatula to spread the chocolate evenly over the top.
Place the pan in the refrigerator for at least 2 hours, or until the chocolate is set and the bars have firmed up.
Once set, remove the bars from the pan using the parchment paper. Cut into 12 equal squares or bars.
Store the crunch bars in an airtight container in the fridge for up to one week.
