Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter Melted.
  • ½ cup granulated sugar
  • 16 oz cream cheese Softened.
  • 1 cup pumpkin puree
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon For extra flavor, consider adding a dash of clove or allspice.
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ cup heavy whipping cream Whipped until stiff peaks form.

Instructions
 

  • In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
  • Press the graham cracker mixture firmly into the bottom of a 9-inch springform pan to create an even crust. Set aside.
  • In another large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  • Add the pumpkin puree, powdered sugar, vanilla extract, ground cinnamon, nutmeg, and ginger to the cream cheese. Mix until fully incorporated and smooth.
  • In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the pumpkin mixture until just combined.
  • Pour the pumpkin cheesecake filling over the prepared crust, spreading it evenly with a spatula.
  • Refrigerate the cheesecake for at least 4 hours, or until firm. For best results, let it chill overnight.
  • Once set, remove the sides of the springform pan and slice the cheesecake into wedges to serve.
