Beat cream cheese, pumpkin puree, powdered sugar, and pumpkin pie spice in a large mixing bowl until smooth and well blended.
Stir in vanilla wafer crumbs until evenly combined. Add more crumbs if mixture is too soft.
Chill the mixture in the refrigerator for 20 minutes to firm up.
Shape into 1-inch balls using a scoop or hands. Place on parchment-lined baking sheet.
Melt 2 cups of white chocolate in 30-second intervals in microwave, stirring each time, until smooth.
Dip each ball into melted chocolate, let excess drip off, then place back on tray.
Melt ½ cup white chocolate and drizzle over dipped balls for decoration.
Refrigerate balls for at least 30 minutes until set.
Notes
Store in fridge up to 1 week or freeze individually wrapped for up to a month. Thaw overnight in fridge before eating.
