  • 2 ½ C White Chocolate split into two amounts for dipping and drizzling
  • ¾ C Vanilla Wafer Crumbs possibly double if your mixture feels too soft
  • ½ C Pumpkin Puree smooth, fall flavor
  • 6 oz Cream Cheese room temp
  • ¼ C Powdered Sugar adds sweet balance
  • 1 ½ teaspoon Pumpkin Pie Spice kick of cinnamon and spice

  • Beat cream cheese, pumpkin puree, powdered sugar, and pumpkin pie spice in a large mixing bowl until smooth and well blended.
  • Stir in vanilla wafer crumbs until evenly combined. Add more crumbs if mixture is too soft.
  • Chill the mixture in the refrigerator for 20 minutes to firm up.
  • Shape into 1-inch balls using a scoop or hands. Place on parchment-lined baking sheet.
  • Melt 2 cups of white chocolate in 30-second intervals in microwave, stirring each time, until smooth.
  • Dip each ball into melted chocolate, let excess drip off, then place back on tray.
  • Melt ½ cup white chocolate and drizzle over dipped balls for decoration.
  • Refrigerate balls for at least 30 minutes until set.

Notes

Store in fridge up to 1 week or freeze individually wrapped for up to a month. Thaw overnight in fridge before eating.
