Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish with butter or non-stick spray.
In a large mixing bowl, use a whisk to cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Reserve about 1 cup of the cookie dough. Spread the remaining cookie dough evenly in the bottom of the prepared pie dish, pressing it slightly to create an even layer.
Spoon the Nutella over the cookie dough layer and spread it evenly.
Take the reserved cookie dough and crumble it on top of the Nutella layer, covering it as evenly as possible.
Bake in the preheated oven for 20-25 minutes, or until the edges are golden and the center looks set.
Remove from the oven and let it cool in the pie dish for at least 10 minutes before slicing.
