Cut chicken thighs into bite-sized pieces. Keep sizes even for consistent cooking.
Heat olive oil in pan over medium-high heat. Brown chicken on all sides for 5–7 minutes.
In a bowl, whisk together soy sauce, bourbon or juice, water, vinegar, brown sugar, ginger, garlic powder, and pepper.
Pour sauce over browned chicken. Stir and bring to a boil.
Reduce heat and simmer uncovered for 20 minutes, stirring occasionally.
Stir in cornstarch slurry. Simmer until glossy and thick, about 2 minutes.
Remove from heat. Let it cool slightly before serving.
Serve hot over rice or the side of your choice.
Notes
Store leftovers in the fridge 3-4 days, or freeze for longer. Reheat gently with extra splash of water for saucy consistency.
