  • 1 tablespoon Olive oil for browning
  • 2 lbs Chicken thighs skinless, cut bite-sized
  • Ground ginger to taste
  • Garlic powder to taste
  • Black pepper 4 twists
  • cup Soy sauce
  • cup Bourbon or dark whiskey or apple juice
  • ½ cup Water
  • 1 tablespoon Rice vinegar
  • ½ cup Brown sugar packed
  • 1 tablespoon Cornstarch mixed in 3 tablespoon cold water

  • Cut chicken thighs into bite-sized pieces. Keep sizes even for consistent cooking.
  • Heat olive oil in pan over medium-high heat. Brown chicken on all sides for 5–7 minutes.
  • In a bowl, whisk together soy sauce, bourbon or juice, water, vinegar, brown sugar, ginger, garlic powder, and pepper.
  • Pour sauce over browned chicken. Stir and bring to a boil.
  • Reduce heat and simmer uncovered for 20 minutes, stirring occasionally.
  • Stir in cornstarch slurry. Simmer until glossy and thick, about 2 minutes.
  • Remove from heat. Let it cool slightly before serving.
  • Serve hot over rice or the side of your choice.

Notes

Store leftovers in the fridge 3-4 days, or freeze for longer. Reheat gently with extra splash of water for saucy consistency.
