Heat vegetable oil in the cooker over medium-high heat and brown beef in batches.
Remove browned beef and set aside.
Add onions to pot and sauté until golden brown and fragrant.
Stir in garlic, tomato paste, paprika, and caraway seeds. Cook for 1–2 minutes.
Return beef to pot. Season with salt and pepper. Stir gently.
Pour in beef broth and secure pressure cooker lid.
Cook on high pressure for 35 minutes, then do natural release for 15 minutes.
Open lid carefully and stir in sour cream off heat.
Serve hot with noodles, potatoes, or crusty bread.
Notes
Reheat leftovers gently to preserve the sour cream and tender beef. Portion and freeze for easy future meals. Great as a stew base!
