Season the chicken thighs or breasts with salt and pepper. Don’t be shy here; seasoning makes all the difference.
Heat your pressure cooker pan on medium and add oil if you plan on searing. Sear chicken on each side until golden brown, about 3–4 minutes.
Remove the chicken and set aside. In the same pan, stir in the rice and toast it for 1 minute.
Pour in chicken broth and BBQ sauce, stirring until well mixed.
Place the chicken back into the pan, nestling it into the rice mixture.
Seal the lid of the pressure cooker. Cook on high pressure for 10 minutes.
Let it natural release for 10 minutes before opening the lid.
Fluff the rice gently, slice or shred chicken if desired, and serve hot.
Notes
Optional: garnish with fresh herbs and lemon wedges before serving. Store leftovers in the fridge for up to 4 days or freeze for longer storage.
