  • 1 lb Boneless skinless chicken thighs or breasts your choice
  • Salt and pepper to taste
  • Oil for sautéing
  • 1 cup Long-grain rice
  • 2 cups Chicken broth
  • ½ cup BBQ sauce honey BBQ recommended

  • Season the chicken thighs or breasts with salt and pepper. Don’t be shy here; seasoning makes all the difference.
  • Heat your pressure cooker pan on medium and add oil if you plan on searing. Sear chicken on each side until golden brown, about 3–4 minutes.
  • Remove the chicken and set aside. In the same pan, stir in the rice and toast it for 1 minute.
  • Pour in chicken broth and BBQ sauce, stirring until well mixed.
  • Place the chicken back into the pan, nestling it into the rice mixture.
  • Seal the lid of the pressure cooker. Cook on high pressure for 10 minutes.
  • Let it natural release for 10 minutes before opening the lid.
  • Fluff the rice gently, slice or shred chicken if desired, and serve hot.

Notes

Optional: garnish with fresh herbs and lemon wedges before serving. Store leftovers in the fridge for up to 4 days or freeze for longer storage.
