Cajun Seasoning

  • 2 teaspoon Smoked paprika
  • 1 teaspoon Oregano
  • 1 teaspoon Thyme
  • ½ teaspoon Garlic powder
  • ½ teaspoon Onion powder
  • ¼ teaspoon Cayenne pepper
  • ¼ teaspoon Black pepper
  • ¼ teaspoon Salt

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 tablespoon Butter
  • 1 lb Boneless, skinless chicken breast
  • 1 Yellow onion diced
  • ½ lb Penne pasta uncooked
  • 15 oz Fire roasted diced tomatoes
  • 2 cups Chicken broth
  • 2 oz Cream cheese
  • 3 Green onions sliced

  • Mix smoked paprika, oregano, thyme, garlic powder, onion powder, cayenne, black pepper, and salt together in a bowl.
  • Heat olive oil and butter in your pot. Add chicken with half of the seasoning and cook until browned, about 5–7 minutes. Remove and set aside.
  • Add diced onion and garlic to pot and sauté 2–3 minutes until translucent.
  • Add uncooked penne pasta, fire roasted diced tomatoes, and chicken broth. Stir to coat pasta well.
  • Secure lid and cook under pressure for 6 minutes until float valve rises.
  • Allow slow pressure release. Open lid and stir in cream cheese until smooth and creamy.
  • Return chicken to the pot, stir everything together, and top with sliced green onions.
  • Let sit briefly to thicken if desired. Serve warm.

Notes

Freeze portions if prepping ahead. Reheat gently with added broth to refresh sauce. Optionally use shredded cheese instead of cream cheese for a twist.
