Ingredients
  

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 4 cups beef broth
  • 2 cups elbow macaroni
  • 1 cup diced tomatoes canned or fresh
  • 1 cup shredded sharp cheddar cheese
  • 1 cup milk
  • to taste salt
  • to taste pepper
  • optional chopped green onions
  • optional croutons

Instructions
 

  • In a large pot or Dutch oven, brown the ground beef over medium heat until no longer pink. Drain excess fat if necessary.
  • Add the diced onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onion is translucent.
  • Stir in the Italian seasoning, paprika, salt, and pepper. Mix well to combine all the flavors.
  • Pour in the beef broth and bring to a simmer. Then, add the elbow macaroni and diced tomatoes. Stir to combine and cook for about 10-12 minutes, or until the macaroni is tender.
  • Once the macaroni is cooked, lower the heat and stir in the milk and shredded cheese until the cheese is melted and the soup is creamy.
  • Adjust seasoning with salt and pepper to taste. Serve hot, garnished with optional toppings if desired.

Notes

You can substitute ground turkey or chicken for a lighter option.
Feel free to add vegetables like bell peppers or carrots for extra nutrition.
This soup can be refrigerated and reheated for up to 3 days.
