- 12 oz smoked sausage, sliced
- 8 oz pasta (penne or rotini recommended)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 14.5 oz diced tomatoes (canned)
- 4 cups chicken broth
- 1 cup frozen peas
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional for heat)

Heat the olive oil in a large pot over medium heat. Add the sliced smoked sausage and cook until browned, about 5 minutes. Stir occasionally.
Add the diced onion and bell pepper to the pot, cooking for 3-4 minutes until softened. Add minced garlic and cook for an additional minute, stirring frequently.
Stir in the diced tomatoes, chicken broth, pasta, Italian seasoning, red pepper flakes (if using), and a pinch of salt and pepper. Bring to a boil.
Once boiling, reduce the heat to a simmer. Cover and cook for 10-12 minutes, or until the pasta is al dente, stirring occasionally.
When the pasta is done, add the frozen peas and mix well. Cook for another 2-3 minutes until the peas are heated through.
