  • 1 tablespoon vegan butter
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon Cajun seasoning
  • ¼ teaspoon salt plus more for serving

  • ¼ teaspoon old bay seasoning optional
  • ¼ teaspoon smoked paprika optional

  • Preheat your pressure cooker by setting it to sauté or roast mode if applicable.
  • Peel the onion, trim slightly at both ends but leave base intact. Cut a shallow crisscross into the top without slicing through.
  • Set the onion on foil or rack in the pressure cooker with a drip pan underneath.
  • Mix melted vegan butter or olive oil with all chosen seasonings in a bowl.
  • Pour seasoned oil mixture over onion, letting it drip into cuts and soak through layers.
  • Wrap onion in foil if desired to trap flavor and moisture. For a charred result, leave unwrapped.
  • Cook under high pressure for 25 minutes. Then naturally release for 10 minutes before carefully quick-releasing remaining pressure.
  • Open lid. Check for fork tenderness with jiggly center. If needed, pressure cook a few more minutes.
  • Optional: For extra caramelization, broil in oven 5–10 minutes with extra butter or olive oil.
  • Serve garnished with parsley and extra salt or seasoning as desired.

Notes

To save prep time, peel and cut onions ahead. You can cook multiple onions stacked in foil layers, just add a few minutes to cook time. Store leftovers refrigerated or frozen as wedges. Great reheated with drizzle of broth or oil.
