  • 1 pound Sourdough or French bread cut into chunks
  • 8 Eggs large
  • 2 cups Milk whole or 2%
  • 0.5 cup Heavy whipping cream
  • 0.5 cup Sugar
  • 0.25 cup Light brown sugar unpacked
  • 2 teaspoons Vanilla extract
  • 1.5 teaspoons Ground cinnamon
  • 6-7 Bananas medium, chopped
  • 0.75 cup All-purpose flour
  • 0.75 cup Brown sugar firmly packed
  • 1 teaspoon Cinnamon
  • 0.5 cup Unsalted butter cut into pieces

  • Grease a 9×13 inch casserole dish and add bread chunks evenly.
  • In a large bowl, whisk eggs, milk, heavy cream, sugar, brown sugar, vanilla extract and cinnamon until smooth.
  • Fold in the chopped bananas gently to keep them chunky.
  • Pour mixture over bread chunks and gently press down. Cover and refrigerate for at least 6 hours or overnight.
  • Preheat oven to 350°F (175°C). Uncover casserole and sprinkle streusel topping over it.
  • Bake for 30-35 minutes uncovered until golden and set. Add more streusel if desired and bake another 5 minutes.
  • For pressure cooker version: place dish on trivet with 1 cup water. Seal and cook on high pressure for 25 minutes. Natural release.
  • Serve warm with syrup and enjoy.

Notes

Letting the casserole chill overnight enhances the flavor and creates the best texture. Use a trivet for pressure cooking.
