Begin by patting the salmon fillets dry with a paper towel. This will help achieve a good sear.
Season each salmon fillet with salt and black pepper on both sides.
In a large skillet, heat the olive oil over medium-high heat.
Once the oil is hot, carefully place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes without disturbing, until the skin is crispy.
While the salmon is cooking, prepare the orange glaze. In a bowl, combine the juice of the two oranges, their zest, honey, and soy sauce (if using).
After 4-5 minutes, flip the salmon fillets gently using a spatula. Pour the orange mixture over the salmon in the skillet.
Allow the salmon to cook for an additional 3-4 minutes, spooning the sauce over the fillets to coat them.
Once the salmon is cooked through and flakes easily with a fork, remove it from the skillet and place it on a serving plate.
Drizzle any remaining sauce from the skillet over the salmon and garnish with fresh parsley.
