Preheat your cake pop maker or mini muffin tin oven to 350°F (175°C).
In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, mix the buttermilk, egg, vanilla extract, and melted butter until smooth.
Pour the wet mix into the dry ingredients and stir just until combined.
Optionally, fold in chocolate chips or fruit pieces now.
Lightly grease your popper maker or muffin tin with oil or spray.
Spoon the batter into each cavity about ¾ full.
Cook for 4 to 6 minutes in the cake pop maker or 10 to 12 minutes in the oven.
Once golden and cooked, gently remove and cool slightly before serving.
