Ingredients
  

  • 8 oz whole wheat pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • 4 cups fresh spinach
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional
  • ¼ cup grated Parmesan cheese optional

Instructions
 

  • Begin by boiling a large pot of salted water. Once boiling, add the whole wheat pasta and cook according to package instructions until al dente (about 8-10 minutes). Drain the pasta and set it aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to let it burn.
  • Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes, or until they start to soften.
  • Stir in the fresh spinach, salt, black pepper, and red pepper flakes. Cook for an additional 2-3 minutes until the spinach is wilted and tender.
  • Add the cooked pasta to the skillet and toss everything together until well combined. Cook for another 1-2 minutes to warm through.
  • Serve immediately, topped with grated Parmesan cheese, if desired.

Notes

For added protein, you can toss in cooked chicken breast or chickpeas.
Feel free to substitute any seasonal vegetables you have on hand.
This dish can be stored in an airtight container in the refrigerator for up to three days, making it great for meal prep.
