In a large mixing bowl, combine the flour and salt. Make a well in the center and crack the eggs into the well.
Using a fork, gently beat the eggs while gradually incorporating the flour from the edges of the well until the mixture is too stiff to mix with a fork.
Transfer the dough onto a clean surface and knead it by hand for about 8-10 minutes, or until it becomes smooth and elastic.
Wrap the dough in plastic wrap and let it rest for at least 15-30 minutes at room temperature.
After resting, divide the dough into four equal pieces. Flatten each piece slightly and dust with flour to prevent sticking.
Roll out each piece using a rolling pin or pasta machine to your desired thickness.
Cut the rolled dough into your preferred pasta shape using a knife or pasta cutter.
Bring a large pot of salted water to a boil. Add the pasta and cook for 2-3 minutes or until it floats to the top and reaches the desired tenderness.
Drain the pasta and toss immediately with your favorite sauce, or serve plain with a drizzle of olive oil.
