Ingredients
  

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup unsalted butter Softened.
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ teaspoon vanilla extract
  • ¼ cup peach puree Fresh or canned.
  • ¼ cup sparkling wine Such as Prosecco.
  • ½ cup unsalted butter Softened.
  • 2 cups powdered sugar
  • 2 tablespoons peach puree
  • 2 tablespoons sparkling wine
  • 1 pinch salt

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a mixing bowl, combine flour, baking powder, and salt. Set aside.
  • In another bowl, beat the butter and sugar with an electric mixer on medium speed until light and fluffy.
  • Add the eggs, vanilla extract, and peach puree to the butter mixture and continue to beat until well incorporated.
  • Gradually add the dry ingredients to the wet mixture, alternating with the sparkling wine, beginning and ending with the flour mixture. Mix until just combined.
  • Divide the batter evenly among the prepared cupcake liners, filling each about ⅔ full.
  • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  • Once done, remove the cupcakes from the oven and let them cool in the pan for about 5 minutes before transferring to a cooling rack to cool completely.
  • For the frosting, beat the softened butter in a bowl until creamy.
  • Gradually mix in the powdered sugar, peach puree, sparkling wine, and salt until smooth and fluffy.
  • Once the cupcakes are completely cooled, use a piping bag to frost the cupcakes as desired.

Notes

For an extra special touch, you can garnish the cupcakes with small peach slices or edible glitter.
You can adjust the amount of sparkling wine in the frosting to taste; just remember it may affect the consistency.
Ensure the peach puree is smooth to facilitate easy mixing and frosting.
