Preheat your oven to 325°F (163°C).
In a mixing bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined.
Press the crust mixture firmly into the bottom of the 9-inch springform pan. Bake in the preheated oven for 10 minutes, then remove and set aside to cool.
In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.
Add in the smooth peanut butter and granulated sugar, and mix until well combined.
Add the eggs one at a time, mixing well after each addition. Then add the vanilla extract and sour cream, mixing until smooth and creamy.
Pour the peanut butter cheesecake filling into the prepared crust, spreading it evenly.
Bake the cheesecake in the oven for about 50 minutes, or until the center is set but still slightly jiggly.
Remove the cheesecake from the oven and allow it to cool to room temperature.
Once cooled, spread the grape jelly evenly on top of the cheesecake.
Refrigerate the cheesecake for at least 4 hours or overnight before serving for best results.
