Ingredients
  

  • 1 cup creamy peanut butter
  • 1 cup rolled oats
  • ½ cup honey
  • ½ cup chocolate chips
  • ¼ cup powdered sugar optional for sweetness
  • ½ teaspoon vanilla extract optional

Instructions
 

  • In a mixing bowl, combine the creamy peanut butter and honey. Stir until smooth and well combined.
  • Add the rolled oats to the peanut butter and honey mixture. Stir until the oats are fully coated.
  • If using, add the powdered sugar and vanilla extract, mixing until evenly incorporated.
  • Fold in the chocolate chips gently until they are distributed throughout the mixture.
  • Line your 8x8 inch baking pan with parchment paper for easy removal (optional). Press the peanut butter mixture into the pan evenly, ensuring it's tightly packed.
  • Refrigerate the bars for at least 2 hours to set. For quicker setting, place them in the freezer for 30 minutes.
  • Once set, remove from the pan (using the parchment paper if used) and cut into 12 equal squares.

Notes

For a nut-free version, you can substitute peanut butter with sunflower seed butter.
Store bars in an airtight container in the refrigerator for up to a week.
Feel free to add other mix-ins, such as chopped nuts, dried fruit, or seeds to customize your bars.
