- 1 cup creamy peanut butter
- 1 cup rolled oats
- ½ cup honey
- ½ cup chocolate chips
- ¼ cup powdered sugar optional for sweetness
- ½ teaspoon vanilla extract optional
In a mixing bowl, combine the creamy peanut butter and honey. Stir until smooth and well combined.
Add the rolled oats to the peanut butter and honey mixture. Stir until the oats are fully coated.
If using, add the powdered sugar and vanilla extract, mixing until evenly incorporated.
Fold in the chocolate chips gently until they are distributed throughout the mixture.
Line your 8x8 inch baking pan with parchment paper for easy removal (optional). Press the peanut butter mixture into the pan evenly, ensuring it's tightly packed.
Refrigerate the bars for at least 2 hours to set. For quicker setting, place them in the freezer for 30 minutes.
Once set, remove from the pan (using the parchment paper if used) and cut into 12 equal squares.
For a nut-free version, you can substitute peanut butter with sunflower seed butter.
Store bars in an airtight container in the refrigerator for up to a week.
Feel free to add other mix-ins, such as chopped nuts, dried fruit, or seeds to customize your bars.
