Ingredients
  

  • 1 sheet puff pastry thawed
  • 2 medium pears peeled, cored, and thinly sliced
  • 6 ounces brie cheese sliced
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme leaves chopped
  • 1 egg beaten for egg wash
  • to taste flour for dusting
  • a pinch salt

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the thawed puff pastry sheet to smooth out any creases. Cut the pastry into strips approximately 3 inches wide.
  • Take the thinly sliced pears and layer them along one edge of each strip, overlapping them slightly. Place a slice of brie cheese on top of the pears.
  • Fold the puff pastry over the pear and cheese, encasing them partially, leaving part of the pears exposed.
  • Carefully roll the pastry strip into a rose shape, starting from one end and rolling up towards the other. Place each rose upright in the prepared baking sheet.
  • In a small bowl, combine the honey and chopped thyme. Brush the honeyed thyme mixture over each puff pastry rose.
  • Brush the tops of the pastries with the beaten egg for a golden finish.
  • Bake in the preheated oven for about 20-25 minutes, or until the pastry is golden brown and puffed.
  • Once baked, let the roses cool slightly before serving. Drizzle extra honey if desired.

Notes

You can use other cheeses like goat cheese or cream cheese as alternatives to brie.
Fresh thyme can be substituted with dried thyme, but reduce the quantity as it's more concentrated.
Serve warm for the best flavor and texture.
