Whole roasting chicken

Rinse your chicken and pat it dry.
Rub the whole bird with lemon juice and coarse salt.
Coat the chicken with peri peri sauce thoroughly, including under the skin.
Place the chicken in the pressure cooker, check the sealing ring, lock lid, and set to HIGH pressure for 20 minutes.
Let natural release happen for 10 minutes before opening the lid.
Carefully remove chicken. For crispy skin, finish under broiler or hot pan for a few minutes.
Brush chicken with mixture of peri peri sauce and water for added shine.
Garnish with fresh herbs and serve hot.
