  • 2 cups long grain white rice rinsed until the water runs clear
  • 1 tablespoon olive oil
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • ½ teaspoon ground cumin
  • ½ teaspoon turmeric
  • ¼ teaspoon ground coriander
  • ½ teaspoon salt
  • ½ cup frozen peas
  • 3 cups chicken broth
  • ¼ cup chopped fresh cilantro

  • Rinse your rice under cold water until water runs clear. Drain well.
  • Set your pressure cooker to sauté. Add olive oil, then diced onion. Sauté for 3-4 minutes until soft.
  • Add garlic, cumin, turmeric, coriander, and salt. Sauté 1 more minute until aromatic.
  • Add rice and stir until coated with spices.
  • Pour in chicken broth and stir gently to level contents.
  • Lock lid, set high pressure for 6 minutes. Allow natural pressure release for 10 minutes.
  • Quick release remaining pressure. Stir in frozen peas.
  • Let it sit covered for 5 minutes. Fluff rice.
  • Stir in chopped cilantro and serve warm.

Notes

Fluffing the final rice before adding cilantro improves texture. Serve immediately or refrigerate leftovers.
