  • 1 tablespoon butter softened, divided
  • 2 slices Italian bread
  • 1 tablespoon prepared pesto sauce divided
  • 1 slice provolone cheese
  • 2 slices tomato
  • 1 slice American cheese

  • Spread half of the softened butter on one side of each bread slice. Flip and spread half the pesto on the unbuttered side.
  • Layer provolone, tomato slices, and American cheese between pesto sides to form sandwich.
  • Heat skillet over medium heat and brown sandwich 3-4 minutes per side until golden.
  • Transfer sandwich into pressure cooker pot and secure lid with sealing ring in place.
  • Cook on high pressure for 2 minutes. Allow 1-2 minutes natural release, then slow release the rest of the steam.
  • Carefully remove sandwich, let rest for a moment, then slice and serve warm.

Notes

Serve with chips or pickles on the side. You can skip skillet browning if short on time, but it adds flavor.
