Add the pineapple chunks on top of the chicken and barbecue sauce, distributing them evenly.
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
After 20 minutes, remove the foil and bake for an additional 10 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
Once cooked, remove from the oven and let it rest for 5 minutes before serving.
Serve the chicken garnished with fresh parsley if desired.
