Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the diced onion and cook until translucent, about 3β4 minutes.
Add the minced garlic and grated ginger to the skillet, stirring for about 30 seconds until fragrant.
Increase the heat to high and add the chicken pieces. Cook until the chicken is browned and cooked through, about 5β7 minutes.
Stir in the diced bell pepper, pineapple chunks, soy sauce, and oyster sauce. Continue to cook for another 2β3 minutes until the peppers soften.
Add the rinsed rice to the skillet, mixing well to combine all ingredients. Pour in the chicken broth (or water) and season with salt and pepper.
Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and let it simmer for about 15 minutes, or until the rice is cooked and has absorbed the liquid.
Once cooked, remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork before serving.
Serve hot, garnished with sliced green onions.
