- 1 medium onion, chopped
- 2 medium carrots, sliced
- 1 teaspoon olive oil
- 6 cups vegetable broth
- 1 cup dill pickles, diced Plus extra for garnish.
- ½ cup pickle juice Adjust based on preference for tanginess.
- 2 tablespoons fresh dill, chopped Or 1 tablespoon dried dill.
- 1 teaspoon salt Adjust to taste.
- ½ teaspoon black pepper
- 1 tablespoon sour cream For serving, optional.
Heat olive oil in a large pot over medium heat. Add the chopped onion and sliced carrots. Sauté for about 5 minutes, or until the onion is translucent.
